Serves: 3
Ingredients:
- 2lbs boneless/skinless chicken thighs (6 thighs)
- 2 tablespoons extra-virgin olive oil
- 1 teaspoon dried minced garlic
- 1 teaspoon dried thyme
- 1 teaspoon dried sage
- 1 teaspoon smoked paprika
- Finely ground sea salt and ground pepper, to taste
Instructions:
- Preheat your oven to 450°F
- Pat the chicken thighs dry with paper towels. This helps the skin become crispy.
- In a small bowl, mix the minced garlic, thyme and sage together.
- Rub the chicken thighs with olive oil and sprinkle the seasoning mixture evenly over both sides of the chicken thighs. Place in a baking dish and sprinkle the top of chicken thighs with smoked paprika, salt and pepper.
- Bake for 20-25 minutes, or until the internal temperature reaches 165°F.
- Let the chicken rest for about 5 minutes after baking to allow the juices to redistribute. Enjoy!
Recipe Notes:
- You can marinate the chicken thighs in the seasoning mixture and olive oil for a few hours or overnight for a deeper flavor.
