Serves: 2 – 4

Ingredients:

  • 1 pound green cabbage, cored and sliced into thin strips
  • 1 small onion, thinly sliced
  • 2-3 cloves garlic, minced
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon butter (optional)
  • Salt and pepper, to taste

Instructions:

  1. Heat a large pan over medium heat.
  2. Add olive oil (and butter, if using) and swirl to coat the pan.
  3. Add the cabbage, onion, and garlic. Sauté for about 10 minutes, stirring occasionally, until the cabbage is tender and lightly golden in spots. See note below for caramelizing.
  4. Season with salt and pepper to taste. Enjoy!

Recipe Note:

  • Sometimes I like to let the cabbage caramelize a bit for extra flavor. If it starts to stick, I’ll splash in a little water to loosen things up without adding more fat. It also helps steam the cabbage and soften it faster.
  • For an extra burst of flavor, top with your favorite hot sauce, such as sriracha, or my sugar-free favorite,              G Hughes Sugar Free Thai Chili Sauce.

These cabbage noodles are one of my favorite low-carb options while still getting that cozy, pasta-style satisfaction. They work beautifully with sauces, meatballs, sausage, or even just a sprinkle of cheese.
