Serves: 2
Ingredients:
- 1 recipe Basic Cauliflower Rice (parsley, optional)
- 1 lb ground turkey or grass-fed ground beef
- 1 packet taco seasoning (I use Trader Joe’s)
- 2 tablespoons tomato paste
Optional Toppings: (per serving)
- ⅓ cup frozen fire-roasted peppers and onions (I use Trader Joe’s)
- 2 tablespoons shredded cheddar cheese
- 1 small scoop sour cream
- 1 small scoop guacamole
Instructions:
- Prepare the Basic Cauliflower Rice and set aside.
- Prepare the ground turkey or beef as per the directions on your chosen taco seasoning packet. Stir in 2 tablespoons of tomato paste.
- Place the cauliflower rice into bowls and top with the taco meat.
- Add any optional toppings you’d like — cooked fire-roasted peppers and onions, cheddar cheese, sour cream, and/or guacamole. Enjoy!
This bowl is one of my favorite ways to turn simple ingredients into a filling, flavorful, low-carb meal.
