Serves: 2

    Ingredients:

    • 1 to 1¼ lb wild-caught cod
    • 2 tbsp extra virgin olive oil
    • Watkins Organic Garlic & Herb Seasoning
    • Dried parsley
    • Lemon rind or lemon juice
    • Smoked paprika (I use Watkins)
    • Salt and pepper, to taste

    Instructions:

    1. Preheat the oven to 400°F.
    2. Line a baking tray with aluminum foil and place the cod on a long baking dish. (I use my rectangular Pamper Chef Stone Bar Pan– no affiliation)
    3. Pat the cod dry with paper towels.
    4. Rub the fish with olive oil on all sides.
    5. Season generously with garlic & herb seasoning, dried parsley, smoked paprika, salt, and pepper.
    6. Finish with lemon rind or a squeeze of fresh lemon juice.
    7. Bake for 12–15 minutes, or until the fish is opaque and flakes easily with a fork. Enjoy!

    Recipe Notes:

    • Baking time will depend on the thickness of the fish. Thicker pieces may need closer to 18–20 minutes.
    • Watkins Organic Garlic & Herb Seasoning has become one of my secret ingredients. I use it in so many of my recipes, including my chicken thighs that are already on the site.
    • Cod is a very forgiving fish, so don’t be shy with seasoning. The garlic, herbs, lemon, and smoked paprika work beautifully together.

    Cod is such a light but meaty fish, and this is one of my favorite ways to prepare it. Simple, fresh, and perfect for an easy weeknight dinner.
