Serves: 2
Ingredients:
- 1 to 1¼ lb wild-caught cod
- 2 tbsp extra virgin olive oil
- Watkins Organic Garlic & Herb Seasoning
- Dried parsley
- Lemon rind or lemon juice
- Smoked paprika (I use Watkins)
- Salt and pepper, to taste
Instructions:
- Preheat the oven to 400°F.
- Line a baking tray with aluminum foil and place the cod on a long baking dish. (I use my rectangular Pamper Chef Stone Bar Pan– no affiliation)
- Pat the cod dry with paper towels.
- Rub the fish with olive oil on all sides.
- Season generously with garlic & herb seasoning, dried parsley, smoked paprika, salt, and pepper.
- Finish with lemon rind or a squeeze of fresh lemon juice.
- Bake for 12–15 minutes, or until the fish is opaque and flakes easily with a fork. Enjoy!
Recipe Notes:
- Baking time will depend on the thickness of the fish. Thicker pieces may need closer to 18–20 minutes.
- Watkins Organic Garlic & Herb Seasoning has become one of my secret ingredients. I use it in so many of my recipes, including my chicken thighs that are already on the site.
- Cod is a very forgiving fish, so don’t be shy with seasoning. The garlic, herbs, lemon, and smoked paprika work beautifully together.
Cod is such a light but meaty fish, and this is one of my favorite ways to prepare it. Simple, fresh, and perfect for an easy weeknight dinner.
