Serves: 2

Ingredients:

  • 1 recipe Basic Cauliflower Rice (parsley, optional)
  • 1 lb ground turkey or grass-fed ground beef
  • 1 packet taco seasoning (I use Trader Joe’s)
  • 2 tablespoons tomato paste

Optional Toppings: (per serving)

  • ⅓ cup frozen fire-roasted peppers and onions (I use Trader Joe’s)
  • 2 tablespoons shredded cheddar cheese
  • 1 small scoop sour cream
  • 1 small scoop guacamole

Instructions:

  1. Prepare the Basic Cauliflower Rice and set aside.
  2. Prepare the ground turkey or beef as per the directions on your chosen taco seasoning packet. Stir in 2 tablespoons of tomato paste.
  3. Place the cauliflower rice into bowls and top with the taco meat.
  4. Add any optional toppings you’d like — cooked fire-roasted peppers and onions, cheddar cheese, sour cream, and/or guacamole. Enjoy!

This bowl is one of my favorite ways to turn simple ingredients into a filling, flavorful, low-carb meal.
