Serves: 6

Ingredients:

  • 1 pound organic free-range chicken tenders
  • 3 sweet red peppers, halved
  • ½ cup grape tomatoes, halved
  • 2-3 cloves garlic, crushed
  • ¼ teaspoon dried oregano
  • ¼ teaspoon dried basil
  • 1 tablespoon extra-virgin olive oil
  • 6 oz marinated artichoke hearts, drained and chopped (I love Trader Joe’s Grilled Artichoke Hearts)
  • 1-2 cups cooked brown rice (I use 1 package of Trader Joe’s Frozen Organic Brow Rice)
  • 1 cup fresh organic baby spinach, chopped
  • Finely ground sea salt and ground black pepper, to taste
  • 8 ounce block of feta cheese, crumbled (optional)

Instructions:

  1. Preheat the oven to 375℉.
  2. Microwave the peppers for 4 minutes to soften them.
  3. Remove tendon from chicken tenders and cut into bite size pieces. Season with salt and pepper.
  4. Heat olive oil in a large skillet over medium heat and sauté chicken until cooked, remove from pan. Add crushed garlic and sauté for 1 minute.
  5. Add grape tomatoes, dried oregano, dried basil to the pan and cook for another minute or until desired tenderness.
  6. Stir in artichoke hearts and let mixture simmer for a couple of minutes.
  7. Add the cooked chicken and cooked rice to the pan and continue to simmer for 1 minute. Season with salt and black pepper.
  8. Stir in fresh baby spinach and cook until wilted. Remove from heat and let it cool.
  9. Once the chicken mixture has cooled, add the crumbled feta cheese (if desired) then stuff each pepper half with the mixture.
  10. Spray a baking dish with EVOO or cooking spray and place the stuffed peppers in it. Bake for 10 minutes. Enjoy!!
